The Sommelier Pairs...CabernetsAdd to Wishlist
With this pairing, we aim to highlight the diversity and variety available to the wine lover. Two wines, both Cabernet Sauvignon, though markedly different and equally beguilling, intriguing, but above all, pure class. Whether they serve as an introduction to our list, or maybe a gift for a friend and fellow wine lover, they will not let you down...
- Cabernet Sauvignon 'Signature', 2017, Susana Balbo, Uco Valley, Argentina
From the famed, multi-awarded Susana Balbo. The Queen of Argentinian winemaking.
All of the classic Cabernet Sauvignon descriptors apply here; cassis, fresh mint, tobacco leaves and cigar box - mmm...! - mocha and coffee beans. A powerful, yet sublimely balanced Cabernet. Arguably, more 'classic' in terms of concentration, but the purity of fruit means that the wine is never overblown, nor dense. Pairs with relaxation and socialising!
- Cabernet Sauvignon 'Singular', 2015, Las Mercedes, Valle de Maule, Chile
Though clearly (and proudly) Chilean, there is a faint nod to premium Bordeaux in the purity of the cassis aromas and the restraint demonstrated in this Cabernet. Ripe plums are complemented by soft spice, and light herbal, tobacco notes, and the mouthfeel is silk-textured, with great structure and balance. An understated elegance allows for drinkability whilst the outstanding freshness - for a Cabernet - and considerable length, lends itself to pairing with barbecued and smoked meats.
